Winning Preserves

COMPETITION DAY
From the very moment Liz Murray started to unpack the final 30 contenders in the second round of in our quest to find 3 Perfect Preserves, I knew it was going to be a hot and fiery morning, the heat not coming from the jars but from passion and exacting standards of our team of judges.
We started at 10am and spoonful by spoonful we tasted and considered each and every jar that spread out before us; the taste, the texture, how Gill and Tim would use the jarred delights and of course ‘could we sell this in the shop?’ There were soft fruity spreads and blissful jams, piquant and spicy chutneys and some sizzling ‘hot’ sauces. And my word what a challenge it was to all agree on our final three, so much so we deemed it necessary to extend the final three to a final four.
It was a very , very tough task. However, we finally (and unanimously) agreed that our favourite four were
· Fiona Colonnese's Amazing Indian type SPICY APPLE CHUTNEY using tart apples, garlic, ginger and a remarkable mix of Indian spices.
· Reka Blazsek’s smooth and intense and very beautifully presented BLACKCURRANT CHEESE. Reka suggest using this with cold meats, cheeses and uses it as a filling for sweet dumplings.
· Sandra Robinson’s FAULD FRUITY a fabulous mix of fruits producing a fragrant fruit spread. A recipe that uses a variety of our wonderful UK grown fruit.
· Andrew Rumming’s SPELEOPLUMS that were perfectly preserved in a mix of dark rum and sugar. A preserve with two lives, first the rum soaked plums to eat and then the plum infused fruity liquor to sup afterwards.
We loved our challenge and hope you will forgive and absolve The Judging Panel of any slip-up you may considered we have made.
