Tim's blog - August 2008

Tim is the Head Chef at the River Cottage Local Produce Store and Canteen in Axminster.
Another month already! As we head into August we are still mad busy here at the Canteen and Store. Summer is fully underway (although you wouldn’t always know that from the amount of rain we have had recently) and with it comes a time of plenty of biblical proportions. I really love to cook at this time of year as Mother Nature takes a lot of the work out of the job simply by providing us with such a fantastic range of produce. When the produce is so good and so fresh the trick is not to mess about with it too much. As my old mentor Alistair Little used to say ‘keep it simple’.
So, we are keeping it very simple indeed. One of my friendly fishermen, Ian, has been out on his boat ‘Goodlife’ and has been doing really well with the mackerel fishing. He brings it straight over to me from the boat. Doesn’t get much fresher than that and when the fish is that good we either serve it raw, sushi style, or simply grill it, drizzle it with gremolata and serve with bread. We are also getting these amazing josterberrys, a cross between a gooseberry and a blackcurrant, from Five Penny Organic Farm. These make a delicious upside down cake which we serve with cream and unsurprisingly it’s going down a storm – it is a dish my mum would be very proud of!

Affectionately known as ‘Pam the Jam’, Pam Corbin has been making preserves for as long as she can remember. She is one half of our expert Preserves team and has written a handbook on the subject. She will be down at the Store on Monday 4th August signing copies and answering any questions you may have on jams, pickles, cordials…Keep an eye on our Axminster page for more events this month starting with our cheese of the month, Cornish Blue, local suppliers samplings including South Devon Chilli Farm, Red Rock Brewery and Gusto Seco, amazing veg available and coming soon a meat box scheme to bring you fresh, organic meat.
