This seems the best place on the site to acknowledge my huge debt to my friend Simon Wheeler, who took all the pictures for the three River Cottage books to date, and most of the pictures on this site. His brilliant photographs capture the rich earthy pleasures of growing your own food, raising livestock and cooking with unsurpassably good ingredients.
I have very strong views about food photography, and perhaps the strongest is that it musn't deceive - it musn't sell a dish beyond its reality, or beyond what the reader following the recipe could reasonably achieve. This means all the food photographed must be real, and edible - so, no tricks, no oil, no glycerine, no blow torch. Every dish we have photographed has been cooked by me, and eaten by both of us. I think the food always looks as good as it tastes, and I can only hope Simon thinks it tastes as good as it looks.
