Multi Bird Roast

Are you feeding a crowd this Christmas? If so, we recommend a stunning multi-bird roast as the festive centrepiece. This spectacular combination of succulent game and poultry, with each bird stuffed inside a larger one, has become a River Cottage institution. You may remember Hugh and RC butcher Ray Smith creating an amazing 10-bird roast as part of the Beyond River Cottage series. Now you have the chance to do something very similar yourself.

Your Saturday evening will kick off at 6pm with Ray and the River Cottage team showing you how to make a modern version of this medieval meat feast. They will not actually use 10 birds, but there will be at least three, which could include pigeon, chicken, duck and partridge, all encased in a gigantic Dorset turkey. Our River Cottage cooks will also be showing you how to prepare other fittingly festive dishes to round off your feast.

You will then sit down to a fantastic meal, featuring a multi-bird roast we prepared earlier, and lots of delicious home grown River Cottage veg, roasted to perfection. We will also be treating you to stunning desserts which might include chocolate and chestnut truffle cake or pears poached in red wine and cinnamon.

You will go home wonderfully well fed and with the know-how you need to create a multi-bird roast of your own.

The Multi Bird Roast demonstration does not require practical participation, although Ray might ask for volunteers help.

Tea, coffee and homemade biscuits will be served at the end of the meal.
